Thank you, Paula. Serrano ham from Spain is similar to prosciutto di parma; both are dry-cured, uncooked, and unsmoked. But, when it comes to cured pork products, I think the Spaniards are in whole different league than the Italians. I much prefer the flavor and texture of serrano ham, but that may be because I have eaten it since I was a teenager. Seek it out and give it a try.
I really like the look of that pizza. I would think you could use prosciutto instead of the serrano ham. I’m not sure I’ve seen that ham where I am.
