Carnitas Huevonas

This is not my preferred way of making carnitas, but it sure was delicious! Started with a whole pork butt:

Deboned and cut into big 3″ chunks:

Marinated in this stuff which is fast becoming a favorite even though I avoid buying bottled marinades:


Fried in some fresh lard:

Served with pico de gallo using tomatoes fresh from my garden, corn tortillas and refried beans as shown in the first photo.
